Rich and Hearty Lentil Bolognese

One-pot, Fiber-Rich Meal

  • 4 Medium
  • 2 carrots
  • 2 sticks celery
  • 1 onion
  • 2 cloves garlic
  • 1 cup dry lentils
  • 1 jar tomato puree
  • 1 can chopped and stewed tomatoes
  • 3 Tbs chopped oregano, thyme, parsley, plus more for garnish
  • 1 Tbsp balsamic vinegar
  • salt and pepper
  • Olive oil
  • Parmesan cheese for garnish

OPTIONAL: Chicken stock
OPTIONAL: Extra vegetables to taste (chopped mushrooms, squash, torn kale, etc)

  • Finely dice or grate carrot, onion, celery
  • Cook in large heavy based saucepan over a medium heat with olive oil for 10 minutes or until tender and caramelized
  • Add lentils, tomato puree, tomatoes, herbs, balsamic and 500ml water or chicken stock
  • Cook for 25-40 minutes stirring occasionally – until lentils are falling apart
  • Season with salt and pepper
  • Taste and adjust seasoning
  • Top with parmesan cheese and fresh herbs
