Easy Summer Mocktail: Cucumber Mint Mojito

Don’t get us wrong, we love a healing diet, but sometimes feel a pang of envy looking at the sophisticated mixed drinks and culinary libations coming out of the bar section of parties.

We believe there’s no reason you can’t have an elegant cocktail that’s also healthy, so we’ve set out to recreate some of your favorite recipes.

Here we’re taking a cool spin on the refreshing mojito by removing the rum and replacing the regular sugar with island-inspired coconut sugar.

We’ve added cucumber to make this a perfect picnic refresher to cool down on those warm-weather evenings.

Cucumber Mint Mojito Mocktail

Yield: 1 cool drink

Total Time: 5 minutes
Mocktails are a spin on adult cocktails without the alcohol. We love using fresh ingredients and fancy glasses to enhance the experience. This refreshing cucumber drink will make your summer afternoons that much cooler.

Ingredients

  • 1.5 oz club soda
  • 4-5 slices of cucumber, skin on
  • 2 sprigs of mint
  • 1 oz fresh lime juice (about half a lime)
  • 1 oz simple syrup (See notes)

Instructions

  1. Wash and roughly tear mint leaves into pieces, and add to a glass.
  2. Add in lime juice and cucumbers.
  3. Mash with a wooden spoon to muddle.
  4. Add ice, club soda, and top with simple syrup.
  5. Garnish with a rolled cucumber slice, a slice of lime, and fresh mint.

Notes

Simple sugar is typically a 1:1 of water to sugar dissolved.

Our simple syrup is a 1:1 ratio of water and coconut sugar (it will have a slight tan color)

Alternatively, you can try honey or maple syrup, however, both of these have a distinct flavor, so suit to your taste.
